Apple Cider Cookies

  • 1 cup firmly packed light brown sugar
  • 1/2 cup butter or margarine
  • 1/2 cup apple cider
  • 1/2 cup egg beaters
  • 2 1/4 cup flour
  • 1 /12 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 medium apples peeled and diced
  • 3/4 cup chopped almonds 
    • In large bowl beat sugar and butter until smooth and creamy.  Add cider and egg beaters; beat until smooth.  Gradually blend in flour, cinnamon, baking soda and salt.  Stir in apples and almonds.

      Drop by tablespoonfuls, 2 inches apart onto ungreased baking sheet.  Bake at 375 degrees for 10/12 minutes or until golden brown.

      Cider Glaze

      In small bowl combine 1 cup confectioners sugar and 2 tbs. apple cider until smooth, Drizzle over cookies.
