Apple Cider Cookies
1 cup firmly packed light brown sugar
1/2 cup butter or margarine
1/2 cup apple cider
1/2 cup egg beaters
2 1/4 cup flour
1 /12 tsp cinnamon
1 tsp baking soda
1/4 tsp salt
2 medium apples peeled and diced
3/4 cup chopped almonds

In large bowl beat sugar and butter until smooth and creamy. Add cider and egg beaters; beat until smooth. Gradually blend in flour, cinnamon, baking soda and salt. Stir in apples and almonds.
Drop by tablespoonfuls, 2 inches apart onto ungreased baking sheet. Bake at 375 degrees for 10/12 minutes or until golden brown.
Cider Glaze
In small bowl combine 1 cup confectioners sugar and 2 tbs. apple cider until smooth, Drizzle over cookies.
