Chocolate Pecan Brittle

  • 1 Box saltine crackers
  • 2 pkgs semi-sweet chocolate chips
  • 1 cup sugar
  • 1 pgk chopped pecans
  • 2 sticks butter
  • 2 tsp vanilla extract 

Preheat oven to 350 degrees.  Grease a cookie sheet.  Place saltine crackers side-by-side (touching each other without overlapping), covering entire cookie sheet

 Melt butter over medium heat, add sugar stirring constantly until boiling.  Add vanilla and pour mixture evenly over saltine crackers.  Place crackers in oven for 8 minutes, remove from oven and sprinkle chocolate morsels over crackers and place back in oven for 2 minutes.  Remove from oven and spread chocolate with a spatula over entire cracker mixture.  Sprinkle with pecans, cover and place in freezer for 3/4 hours.  Remove from freezer and break up into pieces.
